Ingredients
1 lb ground turkey
1 tbsp olive oil
2 cloves garlic, minced
1/4 cup mayonnaise
2 tbsp sweet chili sauce
1 tbsp sriracha (adjust to taste)
1 tbsp soy sauce or coconut aminos
2 green onions, sliced
1/4 cup shredded carrots (optional)
2 cups cooked white or brown rice
Sesame seeds and extra sriracha for garnish (optional)
Instructions
1. Heat olive oil in a skillet over medium heat. Add garlic and sauté for 30 seconds.
2. Add ground turkey and cook, breaking it up, until browned and cooked through (about 6–8 minutes).
3. While turkey cooks, whisk together mayo, sweet chili sauce, sriracha, and soy sauce in a small bowl.
4. Reduce heat to low and stir sauce into the turkey mixture until evenly coated and heated through.
5. Add shredded carrots if using, and cook 1–2 more minutes until slightly tender.
6. Serve hot over bowls of cooked rice. Top with green onions, sesame seeds, and extra sriracha if desired.
Notes
For a lighter version, use light mayo or Greek yogurt.
Great with jasmine rice, cauliflower rice, or rice noodles.
