Ingredients
1 lb medium shrimp, peeled and deveined
1/2 cup buttermilk
1/2 cup cornstarch
1/2 cup panko breadcrumbs
Salt and pepper to taste
Cooking spray or olive oil spray
**Bang Bang Sauce:**
1/2 cup mayonnaise
1/4 cup sweet chili sauce
1 tbsp sriracha (adjust to taste)
1 tsp lime juice or rice vinegar
**Optional Garnishes:**
Chopped green onions
Toasted sesame seeds
Instructions
1. Pat shrimp dry and season with salt and pepper.
2. Place shrimp in a bowl with buttermilk. Let soak for 5–10 minutes.
3. In another bowl, mix cornstarch and panko.
4. Preheat air fryer to 400°F (200°C). Spray basket lightly with oil.
5. Remove shrimp from buttermilk, dredge in coating, and shake off excess.
6. Place shrimp in a single layer in the air fryer basket. Spray tops lightly with oil.
7. Air fry for 7–8 minutes, flipping halfway, until golden and crispy.
8. While shrimp cooks, mix bang bang sauce ingredients in a bowl.
9. Toss hot shrimp in sauce or drizzle on top before serving.
10. Garnish with green onions or sesame seeds if desired.
Notes
Keep shrimp crispy by drizzling sauce instead of tossing.
Double the sauce for dipping fries or using in wraps.
Use Greek yogurt in place of mayo for a lighter version.
