Ingredients
2 medium apples (Honeycrisp or Fuji), peeled and thinly sliced
1/2 tsp ground cinnamon
1 tsp coconut oil or butter
2 tsp maple syrup or honey
4 small whole wheat or flour tortillas
1/2 cup shredded mozzarella or cheddar (optional)
Cooking spray or additional oil for pan
Optional toppings: extra maple syrup, Greek yogurt, chopped nuts
Instructions
1. Heat coconut oil or butter in a skillet over medium heat. Add sliced apples and cinnamon. Sauté 5–6 minutes until tender.
2. Drizzle in maple syrup and cook 1 minute more. Remove from heat.
3. Place tortillas on a flat surface. Layer one half of each tortilla with sautéed apples and cheese (if using).
4. Fold tortillas in half.
5. Wipe out skillet and spray lightly with cooking spray or oil. Cook quesadillas 2–3 minutes per side until golden and crispy.
6. Remove from pan and let cool slightly. Slice into wedges.
7. Serve warm with extra syrup, yogurt, or nuts if desired.
Notes
Use almond butter or cream cheese instead of shredded cheese for a twist.
Make it vegan with plant-based butter and skip the cheese.
