Ingredients
1 medium head cauliflower, cut into florets
1/2 cup all-purpose flour
1/2 cup cornstarch
1 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper
2/3 cup water or unsweetened plant-based milk
1 1/2 cups panko breadcrumbs
Cooking spray
Bang Bang Sauce:
1/4 cup mayonnaise (or vegan mayo)
2 tbsp sweet chili sauce
1 tbsp sriracha (adjust to heat preference)
1 tsp honey or maple syrup
Instructions
1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper and spray lightly with cooking spray.
2. In a large bowl, whisk together flour, cornstarch, garlic powder, salt, pepper, and water/milk to form a smooth batter.
3. Dip each cauliflower floret into the batter, letting excess drip off, then roll in panko breadcrumbs to coat.
4. Arrange coated florets in a single layer on the prepared baking sheet. Spray tops lightly with cooking spray.
5. Bake for 25–30 minutes, flipping halfway, until crispy and golden brown.
6. In a small bowl, whisk together all Bang Bang sauce ingredients.
7. Once cauliflower is done, drizzle or toss with Bang Bang sauce just before serving. Serve immediately.
Notes
• For extra crunch, broil for 2–3 minutes at the end—watch closely!
• Sauce can be served on the side for dipping instead of tossing.
• Make it vegan by using vegan mayo and maple syrup.
