Ingredients
1.5 lbs boneless, skinless chicken breast or thighs, cut into 1.5-inch cubes
1 red bell pepper, cut into chunks
1 yellow bell pepper, cut into chunks
1 red onion, cut into chunks
1 zucchini, sliced thick
2 tbsp olive oil
2 tbsp lemon juice
2 cloves garlic, minced
1 tsp dried oregano
1/2 tsp paprika
1/2 tsp salt
1/4 tsp black pepper
Wooden or metal skewers
Instructions
1. If using wooden skewers, soak them in water for 20–30 minutes to prevent burning.
2. Preheat oven to 425°F (220°C). Line a large baking sheet with foil or parchment.
3. In a large bowl, mix olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper.
4. Add chicken to the marinade and toss to coat. Let sit for at least 15 minutes (or up to 4 hours).
5. Thread chicken and veggies alternately onto skewers.
6. Place kabobs on the baking sheet and bake for 20–25 minutes, turning once halfway, until chicken is fully cooked and lightly browned.
7. Serve warm with your favorite sides like tzatziki, rice, or salad.
