Ingredients
1 unbaked pie crust
1 cup black beans, drained and rinsed
1/2 cup bell pepper, diced
1/4 cup red onion, finely diced
1½ cups shredded pepper jack cheese
4 large eggs
1 cup milk or half-and-half
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp smoked paprika
1/2 tsp cumin
Optional add-ins:
Fresh cilantro
Jalapeños
Cooked bacon or sausage
Instructions
1. Preheat oven to 375°F (190°C).
2. Place pie crust into a pie dish and crimp edges if needed.
3. Sprinkle black beans, bell pepper, and red onion evenly over the crust.
4. Top with shredded pepper jack cheese.
5. In a bowl, whisk together eggs, milk, salt, pepper, paprika, and cumin.
6. Pour egg mixture evenly over the filling.
7. Bake for 40–45 minutes until the center is set and the top is lightly golden.
8. Let cool for 10 minutes before slicing and serving.
