Ingredients
For the Cookie Dough:
1/2 cup butter (softened)
1/2 cup sugar
1 egg
1 teaspoon vanilla extract
1 1/2 cups flour
1/2 teaspoon baking powder
For the Filling:
150 g cream cheese (softened)
1/4 cup powdered sugar
For the Mix-Ins:
1/2 cup blueberries (fresh or frozen)
Optional:
White chocolate chips
Instructions
1. Preheat oven to 180°C (350°F) and line a baking tray.
2. In a bowl, cream butter and sugar until light and fluffy.
3. Add egg and vanilla, mix well.
4. Stir in flour and baking powder until dough forms.
5. In another bowl, mix cream cheese and powdered sugar until smooth.
6. Scoop cookie dough and flatten slightly.
7. Add a small amount of cheesecake filling and a few blueberries in the center.
8. Cover with more dough and seal gently.
9. Place on baking tray and bake for 12–15 minutes until lightly golden.
10. Let cool before serving.
Notes
Do not overfill cookies to avoid leaking.
Use frozen blueberries to reduce excess moisture.
Chill dough for thicker cookies.
Store in fridge up to 3 days.
