Ingredients
1/2 cup unsalted butter, softened
3/4 cup granulated sugar
1 large egg
1 tsp vanilla extract
1 1/2 cups all-purpose flour
1/2 tsp baking powder
1/4 tsp salt
1/4 cup blueberry jam or preserves (thick consistency recommended)
Instructions
1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
2. In a large bowl, cream butter and sugar until light and fluffy.
3. Beat in egg and vanilla until smooth.
4. In a separate bowl, whisk together flour, baking powder, and salt.
5. Gradually add dry ingredients to wet mixture and mix until combined.
6. Drop small spoonfuls of blueberry jam over the dough and gently fold 2–3 times to create swirls. Don’t overmix.
7. Scoop dough into 1.5 tbsp balls and place 2 inches apart on prepared baking sheet.
8. Bake for 10–12 minutes or until edges are lightly golden.
9. Cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
• Use homemade or high-quality store-bought jam for the best flavor.
• Chill dough for 15–20 minutes if too soft to scoop.
• These cookies freeze beautifully—bake a batch and save for later.
