Ingredients
For the Cookies:
1/2 cup butter (softened)
1/2 cup sugar
1 egg
1 teaspoon vanilla extract
1 1/2 cups flour
1/2 teaspoon baking powder
For the Filling:
1 cup vanilla pudding (prepared)
For the Chocolate Topping:
1/2 cup chocolate chips
2 tablespoons heavy cream
Optional:
Powdered sugar dusting
Instructions
1. Preheat oven to 180°C (350°F) and line a baking tray.
2. In a bowl, cream butter and sugar until smooth.
3. Add egg and vanilla, mix well.
4. Stir in flour and baking powder until dough forms.
5. Scoop dough onto baking tray and flatten slightly.
6. Bake for 10–12 minutes until lightly golden, then cool.
7. Spoon vanilla pudding onto half of the cookies and top with another cookie to form sandwiches.
8. Melt chocolate chips with cream until smooth.
9. Drizzle or spread chocolate over the cookies.
10. Let set before serving.
Notes
Use thick pudding for better structure.
Chill cookies slightly for easier assembly.
Do not overbake to keep cookies soft.
Store in fridge up to 3 days.
