Ingredients
4 large flour tortillas
6 large eggs
1/4 cup milk
1/2 pound breakfast sausage or bacon, cooked and crumbled
1 cup shredded cheddar cheese
1 cup diced potatoes or hash browns, cooked
1/2 cup diced bell peppers
1/2 cup diced onion
Salt and black pepper, to taste
1/2 teaspoon paprika or taco seasoning (optional)
Olive oil or butter for cooking
Instructions
1. In a bowl, whisk together eggs, milk, salt, pepper, and paprika if using.
2. Heat a little oil or butter in a skillet and sauté onions and bell peppers until softened.
3. Add the egg mixture and scramble until just cooked. Set aside.
4. Cook sausage or bacon separately if not already prepared.
5. Warm tortillas until soft and pliable.
6. Assemble burritos: divide eggs, sausage/bacon, potatoes, and cheese evenly onto the tortillas.
7. Fold the sides inward and roll tightly into burritos.
8. Serve warm or toast in a skillet for a crisp exterior.
9. To freeze: wrap each burrito tightly in foil and freeze for up to 2 months.
Notes
Swap sausage for chorizo for extra flavor.
Add avocado or salsa for a fresh twist.
Ideal for meal prep—reheat in the microwave or air fryer.
