Ingredients
4 cups broccoli florets
2 tbsp butter
1 tbsp olive oil
3 cloves garlic, minced
1/3 cup roasted cashews, roughly chopped
1/2 tsp salt
1/4 tsp black pepper
Optional add-ins:
Lemon juice
Red pepper flakes
Grated parmesan cheese
Instructions
1. Bring a pot of lightly salted water to a boil.
2. Add broccoli and blanch for 2–3 minutes until bright green and tender-crisp. Drain well.
3. Heat butter and olive oil in a large skillet over medium heat.
4. Add garlic and sauté until fragrant, about 30 seconds.
5. Add broccoli to the skillet and toss to coat in garlic butter.
6. Season with salt and black pepper.
7. Stir in chopped cashews and cook for 1–2 minutes until warmed through.
8. Finish with a squeeze of lemon juice if desired.
9. Serve immediately while warm.
Notes
• Do not overcook broccoli—keep it bright and crisp.
• Toast cashews for extra flavor.
• Great as a side for chicken, fish, or steak.
