Ingredients
1 1/2 lbs Brussels sprouts, halved
4 slices thick-cut bacon, chopped
2 tbsp olive oil
Salt and black pepper, to taste
**Hot Bacon Vinaigrette:**
2 tbsp bacon grease (reserved)
1 tbsp apple cider vinegar
1 tsp Dijon mustard
1 tsp honey
1 small shallot, finely diced
Instructions
1. Preheat oven to 425°F (220°C). Toss halved Brussels sprouts with olive oil, salt, and pepper. Spread on a baking sheet, cut side down.
2. Roast for 20–25 minutes, flipping halfway, until golden brown and crispy.
3. While Brussels roast, cook chopped bacon in a skillet until crispy. Remove bacon and reserve 2 tbsp of the grease.
4. In a small bowl, whisk together bacon grease, vinegar, Dijon mustard, honey, and shallot until well combined.
5. Transfer roasted Brussels sprouts to a serving bowl. Toss with warm bacon vinaigrette and top with crispy bacon.
6. Serve immediately while warm and crispy.
Notes
• Add a pinch of red pepper flakes for heat.
• Pairs beautifully with roast chicken, pork, or turkey.
• Make it a main by adding a soft boiled egg or shaved Parmesan.
