Ingredients
For the Meatballs:
400 g ground beef
1/4 cup breadcrumbs
1 egg
2 cloves garlic (minced)
1 teaspoon paprika
1/2 teaspoon cayenne pepper
Salt and pepper to taste
For the Stew:
1 tablespoon olive oil
1 onion (chopped)
1 bell pepper (chopped)
2 cups chicken or beef broth
1 can diced tomatoes
1 teaspoon Cajun seasoning
1/2 teaspoon thyme
Optional:
Rice for serving
Chopped parsley
Instructions
1. In a bowl, mix ground beef, breadcrumbs, egg, garlic, and spices.
2. Form into small meatballs.
3. Heat oil in a pot and brown meatballs on all sides. Remove and set aside.
4. In the same pot, sauté onion and bell pepper until soft.
5. Add diced tomatoes, broth, Cajun seasoning, and thyme.
6. Bring to a simmer.
7. Return meatballs to the pot.
8. Simmer for 20–25 minutes until meatballs are cooked through.
9. Serve hot over rice or on its own, garnished with parsley.
Notes
Adjust cayenne for spice level.
Use smoked paprika for deeper flavor.
Add celery for classic Cajun base.
