Ingredients
4 cups potatoes, peeled and diced
1 tbsp butter
1 tbsp olive oil
1 small onion, diced
2 celery stalks, chopped
3 cloves garlic, minced
1 1/2 tsp Cajun seasoning
1/2 tsp smoked paprika
4 cups chicken or vegetable broth
1 cup heavy cream
Salt and black pepper, to taste
Fresh parsley or green onions, chopped (optional)
Instructions
1. Heat butter and olive oil in a large pot over medium heat.
2. Add onion and celery and cook until softened.
3. Stir in garlic, Cajun seasoning, and smoked paprika.
4. Add diced potatoes and broth and bring to a boil.
5. Reduce heat and simmer for 20–25 minutes until potatoes are tender.
6. Use an immersion blender to partially blend the soup for a creamy texture.
7. Stir in heavy cream and heat gently without boiling.
8. Season with salt and black pepper to taste.
9. Serve hot, garnished with parsley or green onions if desired.
Notes
• Blend more or less depending on desired thickness.
• Add cooked sausage or bacon for extra heartiness.
• Soup thickens as it cools.
