Ingredients
For the Truffles:
1 cup grated carrots
1 cup pitted dates
1/2 cup shredded coconut
1/4 cup almond flour or oats
1/2 teaspoon cinnamon
1/2 teaspoon vanilla extract
For Coating:
1/2 cup shredded coconut
Optional:
1 tablespoon chia seeds or flaxseeds
Instructions
1. Add dates to a food processor and blend until smooth.
2. Add grated carrots, coconut, almond flour, cinnamon, and vanilla.
3. Blend until a sticky mixture forms.
4. Scoop and roll into small balls.
5. Roll each ball in shredded coconut.
6. Place on a tray and refrigerate for 20–30 minutes to firm up.
7. Store in an airtight container and enjoy.
Notes
Soak dates if they are too dry.
Use oats instead of almond flour for a different texture.
Keep refrigerated for freshness.
