Ingredients
500 g ground beef
1 tbsp olive oil
1 small onion, diced
2 cloves garlic, minced
3 cups potatoes, peeled and diced
2 carrots, diced
3 cups chicken or beef broth
1 cup milk
1 cup shredded cheddar cheese
2 tbsp flour
2 tbsp butter
Salt and black pepper, to taste
Paprika (optional)
Instructions
1. Heat olive oil in a large pot over medium heat.
2. Add ground beef and cook until browned. Drain excess fat.
3. Add onion and cook until softened, then stir in garlic.
4. Add potatoes, carrots, and broth. Bring to a boil.
5. Reduce heat and simmer for 15–20 minutes until vegetables are tender.
6. In a small pan, melt butter and whisk in flour to form a roux.
7. Slowly whisk in milk until smooth and thickened.
8. Stir milk mixture into the soup.
9. Add shredded cheese and stir until melted and creamy.
10. Season with salt, pepper, and paprika if desired.
11. Serve hot.
Notes
• Use ground turkey for a lighter version.
• Add cooked bacon for extra cheeseburger flavor.
• Soup thickens as it cools.
