Ingredients
8 oz shrimp, peeled and deveined
1 tbsp olive oil
1 tbsp butter
2 cloves garlic, minced
Salt and pepper, to taste
4 slices sourdough or artisan bread
2 tbsp mayonnaise or softened butter (for spreading)
1 cup shredded mozzarella or provolone cheese
1/2 cup shredded cheddar or Monterey Jack cheese
Chopped parsley or chives (optional, for garnish)
Instructions
1. In a skillet over medium heat, add olive oil and butter. Sauté garlic until fragrant, about 30 seconds.
2. Add shrimp, season with salt and pepper, and cook 2–3 minutes per side until pink and opaque. Remove from heat and chop roughly.
3. Mix cheeses in a bowl. Butter or mayo one side of each bread slice.
4. Assemble sandwiches: spread cheese on unbuttered side, add shrimp, then top with more cheese and second slice of bread.
5. Heat a skillet or griddle over medium. Cook sandwiches 3–4 minutes per side, pressing gently, until golden and cheese is melted.
6. Slice, garnish if desired, and serve hot.
Notes
• Use pre-cooked shrimp to save time—just sauté briefly with garlic.
• Add a dash of chili flakes for heat or lemon zest for brightness.
• Great with tomato soup or a crisp salad on the side.
