Ingredients
1 lb ground beef
1 small onion, diced
3 cloves garlic, minced
4 cups thinly sliced potatoes (Yukon gold or russet)
1 can (10.5 oz) cream of mushroom soup (or GF version)
1 cup milk
1½ cups shredded cheddar cheese
1 tsp paprika
1 tsp garlic powder
1 tsp onion powder
½ tsp dried thyme
Salt and pepper to taste
Fresh parsley for serving
Instructions
1. Preheat oven to 375°F (190°C). Grease a 9×13 baking dish.
2. In a skillet, cook ground beef and onion over medium heat until browned. Drain excess fat.
3. Stir in garlic, paprika, garlic powder, onion powder, thyme, salt, and pepper; cook 1 minute. Set aside.
4. In a bowl, whisk together cream of mushroom soup and milk until smooth.
5. Layer half the sliced potatoes into the baking dish and season lightly with salt and pepper.
6. Top with half the beef mixture and half the cheese.
7. Repeat with remaining potatoes, beef, and cheese.
8. Pour the soup mixture evenly over the casserole.
9. Cover with foil and bake 50–60 minutes, until potatoes are tender.
10. Remove foil and bake an additional 10–15 minutes to brown the top.
11. Let rest 10 minutes before serving. Garnish with parsley.
Notes
Use a mandoline for thin, even potato slices.
Add jalapeños, bacon, or mushrooms for extra flavor.
Swap cheddar for Gruyère or mozzarella for a different twist.
Use gluten-free soup to make the whole dish GF-friendly.
