Ingredients
For the Chicken:
500 g chicken thighs or breast
1 tablespoon olive oil
For the Birria Sauce:
2 cups chicken broth
2 dried chilies (or chili powder)
2 cloves garlic
1/2 onion
1 teaspoon cumin
1 teaspoon paprika
Salt and pepper to taste
For the Tacos:
8 small tortillas
1 cup shredded cheese
Optional:
Fresh cilantro
Onion (chopped)
Lime wedges
Instructions
1. Heat oil in a pot and sauté onion and garlic until fragrant.
2. Add chilies, broth, cumin, paprika, salt, and pepper.
3. Blend the sauce until smooth.
4. Add chicken to the sauce and simmer for 20 minutes until tender.
5. Shred the chicken and return to the sauce.
6. Dip tortillas lightly in the sauce.
7. Fill with chicken and cheese.
8. Cook on a pan until crispy and cheese melts.
9. Serve with extra broth for dipping and garnish with cilantro, onions, and lime.
Notes
Use chicken thighs for more flavor.
