Ingredients
**For the chicken:**
1 lb boneless, skinless chicken breast or thighs
1 tbsp olive oil
1 tsp garlic powder
1 tsp oregano
1/2 tsp paprika
Salt and pepper to taste
Juice of 1/2 lemon
**For the tzatziki sauce:**
1 cup plain Greek yogurt
1/2 cucumber, grated and drained
1 clove garlic, minced
1 tbsp lemon juice
1 tbsp olive oil
1 tbsp chopped fresh dill (or 1 tsp dried)
Salt and pepper to taste
**For the bowl:**
2 cups cooked white or brown rice
1/2 cup diced tomatoes
1/2 cup chopped cucumber
1/4 cup sliced red onion
1/4 cup crumbled feta cheese
Fresh parsley or dill for garnish
Instructions
1. In a bowl, mix olive oil, garlic powder, oregano, paprika, salt, pepper, and lemon juice. Add chicken and toss to coat. Marinate for at least 15 minutes (or overnight).
2. Cook chicken in a skillet over medium heat for 5–6 minutes per side until cooked through. Let rest, then slice.
3. For tzatziki, combine all sauce ingredients in a bowl. Mix well and refrigerate until ready to use.
4. Assemble bowls with rice, sliced chicken, tomatoes, cucumbers, onion, feta, and a generous dollop of tzatziki.
5. Garnish with fresh herbs and serve warm or chilled.
Notes
Use store-bought tzatziki to save time.
Substitute quinoa or cauliflower rice for a low-carb version.
