Ingredients
For the cookie dough:
1/2 cup unsalted butter, softened
1/2 cup granulated sugar
1/4 cup brown sugar
1 large egg
1 tsp vanilla extract
1 1/2 cups all-purpose flour
1/2 tsp baking soda
1/2 tsp salt
For the cheesecake filling:
4 oz cream cheese, softened
2 tbsp powdered sugar
1/2 tsp vanilla extract
For the cinnamon sugar:
1/3 cup granulated sugar
1 tsp ground cinnamon
Instructions
1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
2. In a bowl, beat butter, granulated sugar, and brown sugar until creamy.
3. Mix in egg and vanilla extract.
4. In a separate bowl, whisk flour, baking soda, and salt.
5. Gradually add dry ingredients to wet ingredients until dough forms.
6. In another bowl, mix cream cheese, powdered sugar, and vanilla until smooth.
7. Roll cookie dough into balls and flatten slightly.
8. Add a small spoonful of cheesecake filling to the center and seal dough around it.
9. Roll each cookie in cinnamon sugar mixture.
10. Place cookies on baking sheet.
11. Bake for 10–12 minutes until edges are set.
12. Cool slightly before serving.
Notes
• Chill dough if it feels too soft.
• Don’t overfill with cheesecake for easier sealing.
• Store leftovers in the fridge for best texture.
