Ingredients
For the Steak:
500 g steak (flank or sirloin)
2 tablespoons olive oil
2 cloves garlic (minced)
Juice of 1 lime
1 teaspoon cumin
1 teaspoon paprika
Salt and pepper to taste
For the Rice:
2 cups cooked rice
Juice of 1 lime
2 tablespoons chopped cilantro
Salt to taste
For the Bowl:
1 avocado (sliced)
1 cup cherry tomatoes (halved)
1/2 cup corn
1/4 cup red onion (sliced)
Optional Dressing:
2 tablespoons yogurt or sour cream
1 tablespoon lime juice
1 tablespoon chopped cilantro
Instructions
1. In a bowl, mix olive oil, garlic, lime juice, cumin, paprika, salt, and pepper.
2. Coat the steak with the marinade and let sit for at least 20 minutes.
3. Cook the steak in a hot pan or grill for 3–5 minutes per side depending on thickness.
4. Let the steak rest for 5 minutes, then slice thinly.
5. In a bowl, mix cooked rice with lime juice, cilantro, and salt.
6. Prepare the dressing by mixing yogurt, lime juice, and cilantro.
7. Assemble bowls with rice as the base.
8. Top with sliced steak, avocado, tomatoes, corn, and onion.
9. Drizzle dressing on top and serve immediately.
Notes
Use brown rice or quinoa for a healthier option.
Add black beans for extra protein.
Adjust spice level with chili flakes or hot sauce.
