1½ cups warm water

2¼ teaspoons active dry yeast

4 cups all-purpose flour

For the baking soda bath:

⅔ cup baking soda

10 cups water

For the cinnamon sugar coating:

½ cup unsalted butter, melted

¾ cup granulated sugar

2 teaspoons ground cinnamon

Instructions

1. In a large bowl, combine warm water, sugar, and yeast. Let sit for 5 minutes until foamy.

2. Add flour, salt, and melted butter and mix until a dough forms.

3. Knead dough for 5 minutes until smooth, then cover and let rest for 30 minutes.

4. Preheat oven to 425°F (220°C) and line baking sheets with parchment paper.

5. Divide dough into portions and roll each into a rope, shaping into pretzels.

6. Bring water and baking soda to a boil.

7. Carefully dip each pretzel into the baking soda bath for 20–30 seconds.

8. Place pretzels on baking sheet and bake for 12–14 minutes until golden brown.

9. Brush warm pretzels with melted butter.

10. Mix sugar and cinnamon, then generously coat each pretzel.

11. Serve warm.

Notes

Do not skip the baking soda bath—it gives pretzels their classic texture.

For extra softness, brush with butter immediately after baking.
