Ingredients
**For the crust:**
1 unbaked 9-inch pie shell (store-bought or homemade)
**For the filling:**
3 large eggs
3/4 cup granulated sugar
2 cups whole milk
1 tsp vanilla extract
1/2 tsp ground cinnamon
1/4 tsp salt
Freshly grated nutmeg for topping (optional)
Instructions
1. Preheat oven to 350°F (175°C). Place pie shell in a 9-inch pie pan.
2. In a mixing bowl, whisk together eggs and sugar until well combined.
3. Add milk, vanilla, cinnamon, and salt. Whisk until smooth.
4. Pour custard mixture into the prepared pie shell.
5. Sprinkle top with nutmeg if using.
6. Carefully transfer pie to center rack of oven.
7. Bake for 45–50 minutes, or until center is just set and a knife inserted comes out clean.
8. Cool on a wire rack. Chill at least 2 hours before slicing for best texture.
9. Serve cold or at room temperature with whipped cream if desired.
Notes
For extra richness, substitute 1/2 cup heavy cream for part of the milk.
Let the pie cool completely before slicing to prevent runny custard.
Store covered in the refrigerator up to 3 days.
