Ingredients
FOR THE BEEF FILLING:
1 lb ground beef
1 small onion, diced
2 cloves garlic, minced
1 cup frozen peas and carrots
1 cup beef broth
2 tbsp tomato paste
1 tbsp Worcestershire sauce
1 tsp dried thyme
½ tsp paprika
Salt and pepper, to taste
2 tbsp flour
FOR THE CHEESY MASHED POTATO TOPPING:
2 lbs potatoes, peeled and cubed
4 tbsp butter
½ cup milk or cream
1 cup shredded cheddar cheese
Salt and pepper, to taste
Instructions
1. Preheat oven to 400°F (200°C).
2. Boil potatoes in salted water until tender, about 15 minutes. Drain and mash with butter, milk, cheese, salt, and pepper. Set aside.
3. Meanwhile, brown ground beef and onion in a skillet over medium heat. Drain excess fat.
4. Add garlic, tomato paste, flour, thyme, paprika, salt, and pepper. Cook 1 minute.
5. Pour in beef broth and Worcestershire sauce. Add peas and carrots. Simmer 5–7 minutes until thickened.
6. Transfer beef mixture to a baking dish and spread evenly.
7. Top with mashed potatoes, smoothing or creating peaks for browning.
8. Bake 20–25 minutes, or until golden and bubbling.
9. Let rest 5 minutes before serving.
Notes
Use leftover mashed potatoes for an even quicker meal.
Swap cheddar for Parmesan for a sharper topping.
Add corn for extra sweetness.
Broil the top for a crispier, golden finish.
