Ingredients
4 salmon fillets (6 oz each), skin removed
1/2 cup lump crab meat
1/2 cup cooked shrimp, chopped
4 oz cream cheese, softened
1/4 cup shredded mozzarella or Parmesan
1 tbsp mayonnaise
1 garlic clove, minced
1 tsp Old Bay seasoning
1 tbsp chopped parsley
Juice of 1/2 lemon
Salt and pepper to taste
Olive oil or melted butter, for brushing
Instructions
1. Preheat oven to 375°F (190°C). Line a baking dish with parchment or lightly grease.
2. In a bowl, mix crab, shrimp, cream cheese, mayo, cheese, garlic, Old Bay, parsley, lemon juice, salt, and pepper until combined.
3. Pat salmon fillets dry. Cut a slit in the center of each to create a pocket (do not slice all the way through).
4. Stuff each salmon fillet with the seafood mixture.
5. Place stuffed fillets in the baking dish and brush tops lightly with olive oil or butter.
6. Bake for 18–20 minutes, or until salmon is opaque and flakes easily.
7. Broil for 1–2 minutes for a golden top if desired.
8. Serve hot with lemon wedges and fresh herbs.
Notes
Make it spicy by adding a dash of hot sauce or cayenne to the filling.
Great served with garlic mashed potatoes, rice pilaf, or sautéed greens.
Can prep stuffing mix ahead and refrigerate up to 1 day before stuffing.
