Ingredients
1 lb ground beef
1 tbsp olive oil
1 small onion, diced
3 cloves garlic, minced
2 medium potatoes, diced
1 can (15 oz) corn, drained
1 can (15 oz) black beans, drained and rinsed
1 can (10 oz) diced tomatoes with green chilies
3 cups beef broth
1 tsp paprika
1 tsp chili powder
1/2 tsp cumin
Salt and black pepper, to taste
1 cup heavy cream
1½ cups shredded cheddar cheese
Optional toppings:
Chopped green onions
Sour cream
Crushed tortilla chips
Instructions
1. Heat olive oil in a large pot over medium heat.
2. Add onion and sauté until softened, then stir in garlic.
3. Add ground beef and cook until browned, breaking it up as it cooks.
4. Drain excess grease if needed.
5. Stir in potatoes, corn, black beans, diced tomatoes, beef broth, and seasonings.
6. Bring to a simmer and cook for 15–18 minutes until potatoes are tender.
7. Reduce heat and stir in heavy cream.
8. Add shredded cheddar cheese and stir until melted and creamy.
9. Taste and adjust seasoning as needed.
10. Serve hot with your favorite toppings.
Notes
• Use ground turkey for a lighter option.
• Add jalapeños for extra heat.
• Thickens as it sits—add broth when reheating.
