Ingredients
1 lb large shrimp, peeled and deveined
1 tbsp olive oil
2 tbsp butter, divided
4 cloves garlic, minced
1/2 cup sun-dried tomatoes, chopped
1 cup orzo pasta
2 cups chicken broth
1/2 cup heavy cream
1/2 cup grated Parmesan cheese
2 cups fresh spinach
1/2 tsp Italian seasoning
Salt and pepper, to taste
Fresh parsley, for garnish (optional)
Instructions
1. Season shrimp with salt and pepper. In a large skillet, heat olive oil over medium heat. Add shrimp and cook 2–3 minutes per side until just pink. Remove and set aside.
2. In the same skillet, melt 1 tbsp butter. Add garlic and sun-dried tomatoes; sauté for 1–2 minutes.
3. Stir in orzo and toast for 1 minute. Add chicken broth and bring to a simmer.
4. Cover and cook 8–10 minutes, stirring occasionally, until orzo is tender and liquid is mostly absorbed.
5. Reduce heat. Stir in heavy cream, Parmesan, and remaining butter until creamy.
6. Add spinach and stir until wilted. Return shrimp to skillet and warm through for 1–2 minutes.
7. Top with fresh parsley and serve immediately.
Notes
• For extra flavor, add a splash of white wine before the broth.
• Sub half-and-half for a lighter cream sauce.
• Delicious with crusty bread or a fresh side salad.
