Ingredients
1 lb boneless, skinless chicken breast or thighs, diced
1 tbsp olive oil
1 tsp Italian seasoning
1/2 tsp salt
1/4 tsp black pepper
3 cloves garlic, minced
1 package (16 oz) shelf-stable potato gnocchi
3/4 cup chicken broth
1 cup heavy cream
1/3 cup grated Parmesan cheese
1 tbsp lemon zest
2 tbsp fresh lemon juice
1 cup baby spinach (optional)
Fresh parsley, for garnish
Instructions
1. Heat olive oil in a large skillet over medium heat. Add diced chicken, Italian seasoning, salt, and pepper. Cook for 5–6 minutes until browned and cooked through. Remove and set aside.
2. In the same skillet, add minced garlic and sauté for 30 seconds.
3. Add gnocchi, chicken broth, and cream. Stir and bring to a simmer.
4. Cook for 5–6 minutes, stirring occasionally, until gnocchi is tender and sauce begins to thicken.
5. Stir in Parmesan, lemon zest, lemon juice, and spinach (if using). Cook for 2–3 more minutes until creamy.
6. Return chicken to skillet and stir to combine. Taste and adjust seasoning.
7. Garnish with chopped parsley and serve warm.
Notes
• Add red pepper flakes for a little heat.
• Swap spinach for kale or peas for a green boost.
• Great with crusty bread or a simple side salad.
