Ingredients
1 tbsp butter
1 tbsp olive oil
1 small onion, finely diced
3 cloves garlic, minced
1 cup dry orzo pasta
2½ cups vegetable or chicken broth
2 cups broccoli florets, chopped small
1/2 cup heavy cream
1½ cups shredded sharp cheddar cheese
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp paprika
Optional add-ins:
Cooked chicken
Crispy bacon bits
Red pepper flakes
Instructions
1. Heat butter and olive oil in a large skillet or pot over medium heat.
2. Add onion and sauté until soft, then stir in garlic until fragrant.
3. Add orzo and toast for 1–2 minutes, stirring frequently.
4. Pour in broth and bring to a gentle simmer.
5. Cook, stirring often, until orzo is tender and liquid is mostly absorbed.
6. Stir in broccoli and cook for 2–3 minutes until tender-crisp.
7. Reduce heat and stir in heavy cream.
8. Add cheddar cheese gradually, stirring until melted and creamy.
9. Season with salt, pepper, and paprika.
10. Serve warm and enjoy immediately.
