Ingredients
1 cup short-grain white rice
2 cups water
3 cups whole milk (or dairy-free milk)
½ cup heavy cream (optional for extra creaminess)
⅓ cup granulated sugar
½ cup raisins
1 tsp ground cinnamon
¼ tsp salt
1 tsp vanilla extract
Optional: pinch of nutmeg or lemon zest
Instructions
1. Rinse rice under cold water.
2. In a medium saucepan, combine rice and water. Bring to a boil, then reduce heat and simmer until water is absorbed.
3. Add milk, cream (if using), sugar, cinnamon, and salt. Stir well.
4. Simmer gently over low heat for 20–25 minutes, stirring often, until thick and creamy.
5. Stir in raisins and cook 3–5 minutes more until plump.
6. Remove from heat and stir in vanilla extract.
7. Taste and adjust sweetness or cinnamon.
8. Serve warm or chilled, with an extra sprinkle of cinnamon.

Use short-grain rice for the creamiest texture.
For dairy-free, use coconut milk or almond milk.
Rice pudding thickens as it cools — add a splash of milk when reheating.
