Ingredients
1 lb boneless, skinless chicken breasts or thighs, diced
1 tbsp olive oil
1 tsp Italian seasoning
1/2 tsp salt
1/4 tsp black pepper
3 cloves garlic, minced
1 cup orzo pasta
1/2 cup tomato sauce
1 1/2 cups chicken broth
1/2 cup heavy cream
1/3 cup grated Parmesan cheese
1/2 cup cherry tomatoes, halved (optional)
Fresh basil or parsley, for garnish
Instructions
1. In a large skillet or pot, heat olive oil over medium heat. Add diced chicken, salt, pepper, and Italian seasoning. Cook until browned and cooked through, about 5–6 minutes. Remove and set aside.
2. In the same pot, add garlic and orzo. Sauté for 1–2 minutes until fragrant.
3. Stir in tomato sauce and chicken broth. Bring to a boil, then reduce heat to low. Simmer uncovered for 8–10 minutes, stirring occasionally, until orzo is tender.
4. Return chicken to the pot. Stir in heavy cream and Parmesan cheese. Cook 2–3 more minutes until creamy and thickened.
5. Stir in cherry tomatoes if using. Taste and adjust seasoning as needed.
6. Garnish with fresh herbs and serve hot.
Notes
• Use rotisserie or leftover chicken for a quicker version.
• Sub half-and-half for heavy cream to lighten it up.
• Add spinach or kale for extra veggies.
