Ingredients
For the Macaron Shells:
1 cup almond flour
1 3/4 cups powdered sugar
3 egg whites
1/4 cup sugar
1/2 teaspoon vanilla extract
For the Filling:
1 cup vanilla pastry cream or custard
For the Topping:
2 tablespoons sugar (for brûlée top)
Optional:
Vanilla bean seeds
Gold dust for decoration
Instructions
1. Preheat oven to 150°C (300°F).
2. Whisk egg whites until foamy, then gradually add sugar and beat until stiff peaks form.
3. Fold in almond flour and powdered sugar gently.
4. Pipe small circles onto a baking sheet.
5. Let sit for 20–30 minutes to form a skin.
6. Bake for 15–18 minutes, then cool completely.
7. Fill macarons with vanilla custard.
8. Sprinkle sugar on top of each macaron.
9. Use a torch to caramelize the sugar until crisp.
10. Let set and serve.
Notes
Do not overmix macaron batter.
Let shells rest before baking.
Use a kitchen torch carefully.
Store in fridge up to 2 days.
