Ingredients
2½ lb baby potatoes, halved or quartered
6 slices bacon, chopped
3 tablespoons olive oil
2½ tablespoons honey
1 teaspoon garlic powder
1 teaspoon smoked paprika
¾ teaspoon salt (or to taste)
½ teaspoon black pepper
1 teaspoon dried rosemary or thyme
Optional garnish: fresh parsley or chives
Instructions
1. Preheat oven to 425°F (220°C) and line a large baking sheet with parchment paper.
2. Add potatoes to a large bowl and pat dry to remove excess moisture.
3. Toss potatoes with olive oil, honey, garlic powder, smoked paprika, salt, pepper, and dried herbs.
4. Spread potatoes evenly on the baking sheet in a single layer.
5. Scatter chopped bacon evenly over the potatoes.
6. Roast for 25 minutes, then flip potatoes and stir bacon.
7. Return to oven and roast another 20–25 minutes until potatoes are golden and crispy and bacon is cooked.
8. If desired, broil for 2–3 minutes for extra crispiness.
9. Remove from oven, garnish with fresh herbs, and serve hot.
Notes
For extra crispiness, make sure potatoes are fully dry before roasting.
Use thick-cut bacon for meatier bites and better texture.
Leftovers can be reheated in the oven or air fryer to restore crispness.
