8 oz goat cheese log, chilled
1/4 cup all-purpose flour
1 egg, beaten
1/2 cup panko breadcrumbs
1 tbsp chopped fresh tarragon
1/4 cup honey (for drizzling)
Neutral oil for frying (e.g., vegetable or grapeseed)
Instructions
1. Slice goat cheese into 1/2-inch rounds. Freeze for 15 minutes for easier handling.
2. Set up a breading station: flour in one bowl, beaten egg in another, and panko in a third.
3. Dredge each goat cheese slice in flour, dip in egg, then coat with panko.
4. Heat oil in a skillet over medium heat. Once hot, fry goat cheese medallions for 1–2 minutes per side until golden and crispy.
5. Drain on paper towels or a rack.
6. Place on serving platter, drizzle with honey, and sprinkle with chopped tarragon.
7. Serve immediately.
Notes
Chill or freeze goat cheese before breading to prevent crumbling.
You can prep ahead and fry just before serving.
