Ingredients
**For the chicken:**
2 large boneless, skinless chicken breasts
Salt and pepper to taste
1/2 cup crumbled feta cheese
1/2 cup all-purpose flour
1 egg, beaten
3/4 cup panko breadcrumbs
1/2 tsp smoked paprika
1/2 tsp garlic powder
Olive oil or butter for pan frying
**For the hot honey:**
1/3 cup honey
1–2 tsp hot sauce or red pepper flakes (adjust to taste)
1 tsp apple cider vinegar
Instructions
1. Slice each chicken breast horizontally to create cutlets (or pound evenly to 1/2-inch thickness).
2. Season chicken with salt and pepper.
3. If stuffing, make a pocket in each cutlet and fill with feta. If topping, reserve feta for later.
4. Set up breading station with flour, egg, and panko mixed with paprika and garlic powder.
5. Dredge each cutlet in flour, then egg, then panko mixture.
6. Heat a large skillet over medium heat with a drizzle of olive oil or butter. Cook chicken 3–4 minutes per side until golden and cooked through. Remove from heat.
7. While chicken rests, make hot honey: warm honey, hot sauce, and vinegar in a small saucepan for 2–3 minutes. Drizzle over chicken.
8. Top with extra feta if desired. Serve with a side salad, rice, or roasted veggies.
Notes
Air fryer option: Cook breaded chicken at 400°F for 12 minutes, flipping halfway.
Use whipped feta for a creamier texture.
Adjust heat level by using more or less chili flakes or hot sauce.
