Ingredients
**For the Zucchini Rings:**
2 medium zucchinis
1/2 cup all-purpose flour
2 large eggs, beaten
1 cup panko breadcrumbs
1/4 cup grated parmesan cheese
1/2 tsp garlic powder
1/2 tsp paprika
Salt and pepper, to taste
Cooking spray or oil
**For the Creamy Dip:**
1/2 cup sour cream or Greek yogurt
1 tbsp mayonnaise
1 tsp lemon juice
1/2 tsp garlic powder
1 tbsp chopped fresh dill or parsley
Salt and pepper, to taste
Instructions
1. Preheat oven to 425°F (or preheat air fryer to 390°F). Line a baking sheet with parchment and lightly grease.
2. Slice zucchinis into thick rings and remove center seeds if needed.
3. Set up three bowls: flour in one, beaten eggs in the second, and a mixture of breadcrumbs, parmesan, garlic powder, paprika, salt, and pepper in the third.
4. Dip zucchini rings in flour, then egg, then breadcrumb mixture, pressing to coat.
5. Place on baking sheet (or in air fryer basket).
6. Bake for 20–22 minutes (or air fry for 10–12 minutes), flipping halfway until golden and crisp.
7. While they bake, mix all dip ingredients in a small bowl until smooth.
8. Serve warm zucchini rings with creamy dip.
Notes
Add cayenne to breadcrumbs for a spicy kick.
Make gluten-free by using GF breadcrumbs and flour.
Dip can be made ahead and chilled for deeper flavor.
