Ingredients
2 cups dried black-eyed peas, rinsed
1 bunch collard greens, stems removed and chopped
1 small onion, diced
3 cloves garlic, minced
1 tbsp olive oil
1 tsp smoked paprika
1/2 tsp dried thyme
1/2 tsp red pepper flakes (optional)
6 cups vegetable or chicken broth
Salt and black pepper, to taste
Instructions
1. Add black-eyed peas to the slow cooker.
2. Top with onion, garlic, collard greens, olive oil, and spices.
3. Pour in broth and stir gently to combine.
4. Cover and cook on LOW for 7–8 hours or HIGH for 4–5 hours until peas are tender.
5. Season with salt and black pepper to taste.
6. Stir well and let rest for 10 minutes before serving.
7. Serve warm.
Notes
• Add smoked turkey or ham hock for extra smoky flavor.
• Serve with cornbread or rice for a complete Southern meal.
• Leftovers taste even better the next day.
