Ingredients
1 lb kielbasa sausage, sliced
4 cups green cabbage, chopped
3 cups potatoes, diced
1 small onion, diced
2 carrots, sliced
2 cloves garlic, minced
6 cups chicken broth
1 tsp smoked paprika
1/2 tsp dried thyme
Salt and black pepper, to taste
To finish:
1–2 tbsp apple cider vinegar
Optional garnish:
Fresh parsley
Cracked black pepper
Instructions
1. Add kielbasa, cabbage, potatoes, onion, carrots, garlic, chicken broth, smoked paprika, thyme, salt, and pepper to the crockpot.
2. Stir gently to combine.
3. Cover and cook on LOW for 7–8 hours or HIGH for 4–5 hours until vegetables are tender.
4. Stir in apple cider vinegar during the last 10 minutes of cooking.
5. Taste and adjust seasoning as needed.
6. Serve hot, garnished with parsley or black pepper if desired.
Notes
• The vinegar brightens the whole soup—start with 1 tbsp and adjust.
• Smoked kielbasa adds the best depth of flavor.
• Even better the next day after flavors meld.
