Ingredients
1 1/2 lbs boneless, skinless chicken breast or thighs, cubed
2 cups cooked rice (white or brown)
1 1/2 cups store-bought or homemade tzatziki sauce
1/2 cup crumbled feta cheese
1 cup cherry tomatoes, halved
1/2 red onion, thinly sliced
1 tbsp olive oil
1/2 tsp dried oregano
Salt and pepper to taste
Fresh parsley or dill for garnish (optional)
Instructions
1. Preheat oven to 375°F (190°C). Grease a 9×13-inch casserole dish.
2. Spread the cooked rice evenly across the bottom of the dish.
3. In a bowl, toss chicken with olive oil, oregano, salt, and pepper. Layer on top of rice.
4. Add cherry tomatoes and red onion over the chicken.
5. Spoon tzatziki sauce evenly across the top. Sprinkle with crumbled feta.
6. Cover with foil and bake for 30 minutes. Uncover and bake an additional 10–15 minutes, or until chicken is cooked through and bubbly.
7. Garnish with fresh parsley or dill before serving.
Notes
Use rotisserie chicken to save even more time—just reduce bake time by 10 minutes.
Make your own tzatziki with Greek yogurt, cucumber, garlic, lemon juice, and dill.
Serve with a side of warm pita bread or a cucumber salad.
