Ingredients
1 (9-inch) chocolate or graham cracker pie crust (store-bought or homemade)
For the Filling:
1/2 cup granulated sugar
1/4 cup cornstarch
1/4 tsp salt
2 3/4 cups whole milk
4 oz semi-sweet chocolate, chopped
1/2 cup chocolate chips (optional for extra richness)
3 large egg yolks, lightly beaten
2 tbsp unsalted butter
1 tsp vanilla extract
For the Topping:
1 1/2 cups heavy whipping cream
2 tbsp powdered sugar
1/2 tsp vanilla extract
Chocolate shavings or curls, for garnish (optional)
Instructions
1. In a medium saucepan, whisk together sugar, cornstarch, and salt. Gradually whisk in milk until smooth.
2. Place over medium heat and cook, whisking constantly, until mixture thickens and comes to a gentle boil (6–8 minutes).
3. Reduce heat to low. Stir in chopped chocolate and chocolate chips. Whisk until smooth and melted.
4. Whisk a small amount of hot mixture into the egg yolks to temper. Then slowly whisk yolks into the saucepan.
5. Cook for 2 more minutes, stirring constantly. Remove from heat and stir in butter and vanilla.
6. Pour filling into the prepared pie crust. Smooth the top. Press plastic wrap directly onto filling and refrigerate for at least 4 hours or overnight.
7. Before serving, whip cream with powdered sugar and vanilla until soft peaks form.
8. Spread whipped cream over chilled pie and top with chocolate shavings.
Notes
• For a shortcut, use instant chocolate pudding mix, but homemade is worth it!
• Use dark chocolate for a deeper, richer flavor.
• Pie is best enjoyed within 2–3 days for peak freshness.
