Ingredients
4 large flour tortillas
3/4 lb thinly sliced deli roast beef
4 slices provolone cheese
2 tbsp horseradish mayo or plain mayo (optional)
2 tbsp butter, melted
1/2 tsp garlic powder
1/2 tsp dried parsley
**Au Jus Dip:**
1 packet au jus gravy mix
2 cups beef broth (or per packet instructions)
Instructions
1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment.
2. Lay out tortillas and spread a thin layer of mayo if using.
3. Layer each with roast beef and a slice of provolone.
4. Tightly roll up each tortilla and place seam-side down on the sheet.
5. Brush tops with melted butter mixed with garlic powder and parsley.
6. Bake for 10–12 minutes or until golden and cheese is melty.
7. Meanwhile, prepare au jus dip per packet instructions using beef broth.
8. Slice roll ups into pinwheels or serve whole with a side of warm au jus.
Notes
Use Swiss or mozzarella instead of provolone if preferred.
Can be air-fried at 375°F for 6–8 minutes for extra crispiness.
