Ingredients
1 lb ground beef
1 tbsp olive oil
1 small onion, diced
2 cloves garlic, minced
1 tsp chili powder
1/2 tsp cumin
1/2 tsp paprika
Salt and black pepper, to taste
1 cup enchilada sauce
8 flour or corn tortillas
1½ cups shredded cheddar or Mexican-blend cheese
Optional toppings:
Sour cream
Chopped cilantro
Sliced green onions
Instructions
1. Preheat oven to 375°F (190°C) and lightly grease a baking dish.
2. Heat olive oil in a skillet over medium heat and sauté onion until softened.
3. Add garlic and cook until fragrant.
4. Add ground beef and cook until browned, breaking it up as it cooks.
5. Season with chili powder, cumin, paprika, salt, and pepper.
6. Warm tortillas slightly so they’re easy to roll.
7. Fill each tortilla with beef mixture and a sprinkle of cheese, then roll tightly.
8. Place enchiladas seam-side down in the baking dish.
9. Pour enchilada sauce evenly over the top and sprinkle with remaining cheese.
10. Bake uncovered for 20–25 minutes until bubbly and melted.
11. Let rest for 5 minutes before serving.
Notes
• Swap beef for ground turkey if desired.
• Use red or green enchilada sauce.
• Leftovers reheat beautifully.
