Ingredients
1 lb boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
1/4 cup cornstarch (for coating)
Salt and pepper to taste
2 tbsp oil (vegetable or sesame oil)
**For the sauce:**
1/4 cup honey
2 tbsp soy sauce (low sodium)
1 tbsp rice vinegar or apple cider vinegar
2 cloves garlic, minced
1 tsp sesame oil
1 tsp cornstarch mixed with 1 tbsp water (slurry)
**For garnish:**
1 tbsp sesame seeds
2 green onions, thinly sliced
Cooked rice, for serving
Instructions
1. Season chicken with salt and pepper, then toss with cornstarch until evenly coated.
2. Heat oil in a skillet over medium-high heat. Add chicken in a single layer and cook 6–8 minutes, turning to brown all sides until golden and crispy. Remove from pan and set aside.
3. In the same skillet, whisk together honey, soy sauce, vinegar, garlic, and sesame oil. Bring to a simmer.
4. Stir in cornstarch slurry and cook 1–2 minutes until sauce thickens.
5. Return cooked chicken to skillet and toss to coat in the sauce.
6. Sprinkle with sesame seeds and green onions.
7. Serve hot over rice.
Notes
Use chicken thighs for extra juiciness.
Make it spicy with a squeeze of sriracha or pinch of red chili flakes.
Double the sauce if serving over noodles or veggies.
