Ingredients
2 lbs potatoes, thinly sliced
3 large onions, thinly sliced
3 tbsp butter
1 tbsp olive oil
1 tsp sugar
Salt and black pepper, to taste
For the bake:
1 cup beef or vegetable broth
1 cup heavy cream
1½ cups shredded Gruyère or mozzarella cheese
1/2 cup grated parmesan cheese
1 tsp dried thyme
Optional topping:
Fresh parsley
Instructions
1. Preheat oven to 375°F (190°C) and grease a baking dish.
2. Heat butter and olive oil in a skillet over medium heat.
3. Add onions, sugar, salt, and pepper and cook slowly until deeply caramelized.
4. Layer half of the sliced potatoes in the baking dish.
5. Top with half of the caramelized onions and a sprinkle of thyme.
6. Repeat layers with remaining potatoes and onions.
7. Pour broth and heavy cream evenly over the dish.
8. Top with Gruyère and parmesan cheese.
9. Cover with foil and bake for 45 minutes.
10. Uncover and bake an additional 20–25 minutes until bubbly and golden.
11. Let rest 10 minutes before serving.
