Ingredients
12 oz fresh green beans, trimmed
1/2 cup all-purpose flour
2 large eggs
1 tbsp milk or water
1 cup panko breadcrumbs
1/4 cup grated Parmesan cheese
1/2 tsp garlic powder
1/2 tsp paprika
Salt and pepper, to taste
Oil for frying (vegetable or canola)
Dipping sauce of choice (ranch, chipotle mayo, etc.)
Instructions
1. Bring a pot of water to a boil. Blanch green beans for 2 minutes, then transfer to an ice bath. Drain and pat dry thoroughly.
2. Set up a dredging station: one bowl with flour, one with whisked eggs and milk, and one with panko, Parmesan, garlic powder, paprika, salt, and pepper.
3. Dredge green beans in flour, then dip in egg mixture, then coat in seasoned panko.
4. Heat oil in a deep skillet to 350°F (175°C). Fry green beans in batches until golden brown and crispy, about 2–3 minutes.
5. Remove with slotted spoon and drain on paper towels. Serve hot with your favorite dip.
Notes
• Air fry instead: 400°F for 8–10 minutes, shaking halfway through.
• Skip blanching if green beans are very thin or tender.
• For a spicy kick, add cayenne to the breadcrumb mixture.
