Ingredients
600 g beef chuck or stewing beef, cut into cubes
3 large onions, sliced
2 tbsp oil or lard
2 tbsp sweet paprika
1 tsp smoked paprika (optional)
1 tbsp tomato paste
2 cloves garlic, minced
750 ml beef broth
1 tsp caraway seeds (optional)
Salt and black pepper, to taste
1 bay leaf
Instructions
1. Heat oil or lard in a large pot over medium heat.
2. Add onions and cook slowly until deeply golden and soft.
3. Stir in garlic, tomato paste, and paprika, cooking briefly.
4. Add beef cubes and stir to coat with the onion mixture.
5. Pour in beef broth and add bay leaf and caraway seeds.
6. Season with salt and pepper, bring to a gentle simmer.
7. Cover and cook on low heat for 90–120 minutes until beef is tender.
8. Adjust seasoning, remove bay leaf, and serve hot.
Notes
• Serve traditionally with potatoes, spaetzle, or crusty bread.
• For thicker sauce, simmer uncovered for the last 15 minutes.
• Goulash tastes even better the next day.
