Ingredients
3 ripe bananas, mashed
2 large eggs
1/3 cup melted coconut oil (or butter)
1/3 cup maple syrup (or honey)
1 tsp vanilla extract
1 1/2 cups gluten-free all-purpose flour (with xanthan gum)
1 tsp baking soda
1/2 tsp salt
1/2 tsp ground cinnamon
3/4 cup chocolate chips (plus more for topping)
Instructions
1. Preheat oven to 350°F (175°C). Grease or line a 9×5-inch loaf pan.
2. In a large mixing bowl, mash the bananas. Add eggs, oil, maple syrup, and vanilla. Whisk to combine.
3. Add flour, baking soda, salt, and cinnamon. Stir gently until just combined.
4. Fold in chocolate chips.
5. Pour batter into prepared loaf pan and smooth the top.
6. Sprinkle with extra chocolate chips if desired.
7. Bake for 50–60 minutes or until a toothpick inserted in the center comes out clean.
8. Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
9. Slice and enjoy!
Notes
To make dairy-free, use coconut oil and dairy-free chocolate chips.
Store leftovers wrapped at room temp for up to 3 days or freeze slices for longer.
