Ingredients
4 cups gluten-free cinnamon rolls, cut into cubes
3 large eggs
1½ cups milk or half-and-half
¼ cup heavy cream
⅓ cup brown sugar
2 tbsp melted butter
1 tsp vanilla extract
1 tsp ground cinnamon
¼ tsp nutmeg
¼ tsp salt
OPTIONAL TOPPING:
½ cup gluten-free cream cheese icing (from cinnamon rolls)
Powdered sugar for dusting
Instructions
1. Preheat oven to 350°F (175°C). Grease an 8×8-inch baking dish.
2. Place cinnamon roll cubes evenly into the baking dish.
3. In a bowl, whisk eggs, milk, cream, brown sugar, melted butter, vanilla, cinnamon, nutmeg, and salt.
4. Pour custard evenly over the cinnamon rolls. Gently press down to soak.
5. Let rest 10 minutes.
6. Bake uncovered for 35–40 minutes, until set in the center and lightly golden on top.
7. Warm cream cheese icing slightly and drizzle over the bread pudding if using.
8. Dust with powdered sugar and serve warm.
Notes
Use day-old cinnamon rolls for best texture.
For dairy-free, use plant-based milk and cream.
Add chopped pecans or raisins for extra texture.
Leftovers reheat beautifully and stay soft.
