Ingredients
2 cups gluten-free all-purpose flour (with xanthan gum)
2 tsp baking powder
1/2 tsp salt
1 cup plain Greek yogurt (or high-protein dairy-free yogurt)
1/2 cup cottage cheese, blended smooth
1/2 cup fresh or frozen blueberries
Optional topping:
Egg wash or dairy-free milk
Coarse sugar or oats
Instructions
1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
2. In a large bowl, whisk together flour, baking powder, and salt.
3. In a separate bowl, mix Greek yogurt and blended cottage cheese until smooth.
4. Add wet ingredients to dry ingredients and mix until a dough forms.
5. Gently fold in blueberries.
6. Turn dough onto a lightly floured surface and divide into 4 equal pieces.
7. Roll each piece into a rope and shape into a bagel.
8. Place bagels on the baking sheet.
9. Brush with egg wash or milk and sprinkle with optional toppings.
10. Bake for 22–25 minutes until golden and cooked through.
11. Cool slightly before slicing and serving.
Notes
• Dough will be slightly sticky—this is normal.
• Use frozen blueberries straight from the freezer to avoid streaking.
• Toast leftovers for best texture.
